Pak choi is generally divided into green and white stemmed types. Best described as compact, vase shaped plants. At the baby leaf stage these plants make great additions to salads with their refreshingly crisp and juicy texture, and a hint of mild mustard flavour. Alternatively they are excellent for use in stir-fry and soups.
Similar in taste and texture to normal Pak Choi, it is darker in colour and has smaller leaves.
